Make the dough per the recipe. Scoop the dough as directed - if the recipe includes a chill time, complete this first in the fridge before freezing your dough. For cookies with a sugar coating, I usually do not roll in sugar until just before I bake.

Placed rolled cookie dough onto a parchment paper lined sheet pan, and freeze for an hour until solid. 

Transfer to a ziploc bag or airtight container and label.

It was fun to read that we do basically the exact same thing! 😊 Whenever I give frozen molasses cookie dough balls to friends, I tell them to leave them out for a few minutes so they get tacky and will take hold the turbinado sugar they get rolled in—I loved reading that you say the same thing. I also totally agree about the oven temp—turn it down a bit if they are being baked from frozen.
