Almost 35 years old and have never made hard-boiled eggs in my life. This recipe was a godsend! Followed it very precisely and they turned out magnificently! The yolk had a fluffy yet creamy, delightful texture. Easy to peel and the taste is great! Thank you for this egg-cellent recipe! 🤓

I saw other recipes online that said to let the eggs sit for 15-17 minutes after turning off the heat. I decided to try this one today, and it worked fine. It's very hot here today, so I had trouble cooling the eggs quickly. I put them into a container with some blue ice packs and let cold tap water run over them, but the tap water never got even cool. I wonder if cooling them slowly made them cook longer than the suggested 11 minutes, thus bringing it somewhere between 11 minutes and the other recipes suggesting 15-17 minutes. I'll try it again someday, either with refrigerated water to chill them in, or wait until winter when the tap water runs colder. I feel like the slower cooling time gave them extra cooking time, so I don't know if 11 minutes will be long enough.

This worked perfectly for me.  Thank you so much.  Done to perfection and easy to peel too.

12 hrs on the counter will age eggs 1 week.  2 to 3 weeks old works for me. Wrap your egg carton with a rubber band and store on its side overnight and the yolk will be more centered.  Important for deviled eggs.  I have an electric water pot which will hold 6 xlg eggs.  I use purified water and a teaspoon kosher salt so they won't crack.  I dislike egg film in my water kettle.  Cover eggs with 1 " water. I press the on tab down and listen for it to click off which it does when it reaches a rolling boil.  Let sit 12 minutes, probably because of the bigger eggs.  Pour off hot water and shake pot gently to crack shells and cover twice in cool water.  I dislike using ice here.  After a few minutes I pour them into the sink and gently prod the shells until they craze all over.  If I discover resistant eggs, I chill those in the frig a few hours before peeling.  I always peel under running cool water because it helps. This is twice as fast as my gas stove top and I dont have to guess if I boiled them hard enough.  I lived with green yolks for decades but not anymore. I'm now the family deviled egg expert.  Delish has it right and this is where I first learned of this method.  Thank you for helping me.

Perrrr fect...one thing to keep eggs from ever cracking..slice of lemon about1/8 " or so placed right  in the. Water 😉
