Step 1
In a large pan, combine scallops, shrimps, mushrooms, wine, onion, parsley, lemon juice, and a pinch of salt. Bring to a boil, then simmer for 5 minutes. Avoid overcooking to keep seafood tender.

Transfer the mixture to a strainer set over a pot to reserve 1 cup of the cooking liquid.

In the same pan, melt ¼ cup of butter. Add flour and mix well.

Pour in the reserved liquid and the cream all at once, and cook while whisking for about 3 minutes, or until the mixture comes to a boil and thickens.
Step 5
Remove from heat, add the Gruyère cheese, and stir until melted.
Step 6
Add the seafood mixture back into the pan and mix well.
Step 7
Distribute the mixture evenly into 4 oven-safe shells.
Step 8
In a microwave-safe bowl, melt 1 tbsp of butter, then mix in the breadcrumbs.
Step 9
Sprinkle the breadcrumb mixture over the seafood in the shells.
Step 10
Broil for about 2-3 minutes or until the topping is golden and bubbling.
