Step 1
Chop the chocolate roughly if you are using a bar of chocolate.

Add the chocolate and 1/2 cup of cream to a small pot.

On a low heat, melt everything together while stirring, this should take 5-7 minutes. Once everything is melted, remove form the stove and keep stirring. If the chocolate seizes a bit, that's okay.

Now in a stand mixer or hand held electric whisk, whisk the rest of the cream until it reaches soft peaks.
Step 5
Then add in the powdered sugar and cornstarch (sieved) and whisk on medium until you reach stiff peaks.
Step 6
Add in the chocolate (it should be slightly cooled) in two stages.
Step 7
Fold it in using a spatula each time, if there are white streaks, that's fine.
Step 8
Place in your glasses and refrigerate for up to two hours to allow it to set.
Step 9
When you are ready to serve, top with whipped cream and grated chocolate.
