Step 3
Put all the remaining ingredients, including the caramelized onions, into the Instant Pot. Seal the lid and cook for 1 minute under high pressure.
Step 4
Allow the pressure to release naturally, and then use a fork to fluff the quinoa up.
Step 5
Serve hot, garnished with freshly chopped coriander, a generous ladle of non-dairy yogurt, and lime.
