Step 1
Press the Sauté button on the Instant Pot, and pour in 2 tablespoons of oil. When hot, fry the onions for 7-10 minutes, till they're golden brown. Take the onions out, and keep them aside.
Step 2
Add the remaining tablespoon of oil into the Instant Pot. Put in the peppers and the marinated tofu, stirring it often, so nothing sticks to the bottom.
Step 3
Put all the remaining ingredients, including the caramelized onions, into the Instant Pot. Seal the lid and cook for 1 minute under high pressure.
Step 4
Allow the pressure to release naturally, and then use a fork to fluff the quinoa up.
Step 5
Serve hot, garnished with freshly chopped coriander, a generous ladle of non-dairy yogurt, and lime.
