I love sweet potato - especially orientals (don't even think of microwaving - pan frying ok), I'm going to make this for brunch, stuffed with leftover chili - I'm "no sos" vegan, and I didn't want to wait for a baked! Just cut the sweet potato in half so the whole potato can be cook thoroughly.
