Step 1
Make a fine paste of ginger, chopped garlic, green chillies and coriander leaves.
Step 2
In a heavy bottom cooking vessel, add oil. Once the oil is hot, add cinnamon stick, clove and cardamom.
Step 3
When the spices start to release aroma, add sliced onions and fry till they turn translucent in colour. Now add the chopped tomatoes, turmeric and grinded paste.
Step 4
Cook till the tomatoes turn soft and oil starts to release from the masala. Now add the garam masala and chicken pieces. Saute till the chicken pieces get well coated with masala.
Step 5
Season with salt and add ½ cup of water. Cook till the chicken turns soft. Now add in the soaked rice and stir gently by adding 4 cups of water. Bring this to boil and add salt as per taste.
Step 6
Cook this dish covered on a low flame until the rice is perfectly cooked. Turn off the flame and leave it for 10-15 minutes before opening the lid to serve.
Step 7
Gently mix and garnish with fresh minced coriander leaves.
