Step 1

Preheat and Prepare: Preheat your oven to 425°F. Melt the butter in a large, ovenproof skillet over medium heat. Add the garlic and most of the scallions to the skillet, cooking until they become soft and fragrant.

Step 2

Mix Ingredients: Add the broccoli florets, shredded chicken, white rice, chopped tomato, and a pinch of salt and pepper to the skillet. Stir everything together until well combined and evenly mixed.

Step 3

Prepare Broth Mixture: In a separate bowl, whisk together the chicken broth and sour cream until smooth. Pour this mixture into the skillet and stir until it begins to simmer.

Step 4

Add Cheese and Bake: Stir in half of the diced Havarti and grated Parmesan cheese. Cover the skillet tightly with a lid or aluminum foil. Transfer it to the oven and bake for approximately 20 minutes, or until the rice is tender and cooked through.

Step 5

Broil and Serve: After baking, turn on the broiler. Sprinkle the remaining Havarti and Parmesan cheeses on top of the casserole. Broil until the cheese is golden and bubbly. Finish by sprinkling the reserved scallions on top before serving.
