Step 1
Bring a large pot of water to a rolling boil. Add the baby potatoes to the pot and cook until the potatoes are fork tender and cook about 85-95% of the way.
Step 2
Drain the potatoes and let them cool down completely. Peel the potatoes and cut any large ones in half at a diagonal. In the meanwhile preheat the air fryer at 390F for 5 minutes.
Step 3
Add the potatoes to the air fryer basket and add olive oil over the potatoes. Toss to coat and set the temperature to 390F on Air Fry mode. Cook for 20-25 minutes, making sure to toss the potatoes every 5 or so minutes. You can add more oil if needed.
Step 4
When the potatoes are golden brown and crispy all around, transfer the potatoes to a large bowl and add salt, toss well and then add the remaining dried spices, cilantro-mint chutney, tamarind chutney and lime juice. Mix well to combine.
Step 5
Serve garnished with chopped cilantro, enjoy!
