Step 1
In a small bowl, combine old bay seasoning with thyme. Set aside. Pat dry the chicken with paper towels. Rub the chicken with olive oil; season with old bay seasoning mixture all over the chicken, including under the breast's skin and cavity. Loosely tie the legs together with kitchen twine if you want.
Step 2
Place the instant pot trivet (the metal one that came with the pressure cooker) inside the inner pot; place the chicken breast side down on the rack. Place the air fryer lid on top, set the temperature to air fry to 385ºF for 60 minutes.(Make sure the instant pot pressure cooker isn't plugged in).The instant pot air fryer lid will pause in the middle of the cooking time and tell you when to turn the food. Turn the bird breast side up and cook until an instant meat thermometer reaches 165ºF.(If you don't open the lid, it will resume cooking on its own.)
Step 3
Using kitchen tongs, remove the chicken from the inner pot. Let it rest for 10-15 minutes before carving. Serve and Enjoy!
