Step 1
Turn your Instant Pot to saute, and add in your oil, sausage and onion. You will want to cook until the onions soften and the sausage is browned. This will take about 5 minutes.

Once that is done, stir in your garlic and give it a quick stir.

Pour in your chicken broth and use a wooden spoon to scrape the bottom of your pressure cooker. You need to remove any stuck on bits, as it will cause a burn notice.
Step 4
Once bottom is cleaned, turn the saute mode off. Pour in your black eyed peas, bay leaves, thyme, and ham. Top with tomatoes, and do not stir.
Step 5
Put lid on the pressure cooker, and set the valve to sealing. Cook manual or pressure cook on high for 20 minutes. You will naturally release for 15 minutes.
Step 6
After the 15 minutes release any leftover pressure and remove the electric pressure cooker lid.
Step 7
Remove bay leaves, stir and serve up your black eyed peas!
