Step 1

Select saute on the pressure cooker pot and add butter.

Step 2

When melted, add onions and saute 3 minutes until they start to soften.

Step 3

Add carrots, zucchini, thyme, nutmeg, cayenne pepper, salt, pepper, and broth.

Step 4

Place a steamer basket inside the pot and top with the broccoli.

Step 5

Secure the lid and turn pressure release knob to a sealed position.  Cook at high pressure for 5 minutes.

Step 6

When cooking is complete, use a quick release.

Step 7

Remove the steamer basket.  Add about half of the broccoli back to the pot.

Step 8

Use an immersion blender to blend soup until completely smooth.  Alternatively you can pour the mixture into a high speed blender and puree until smooth.

Step 9

Select saute.  Add milk and cheese and stir until melted and smooth.

Step 10

Stir remaining broccoli into the soup.

Step 11

Serve hot topped with homemade croutons, crackers, and/or cheese.
