An easy way to enjoy all the flavors of cabbage rolls. This soup will be your family's new favorite! 

Instant Pot Cabbage Roll Soup

beef

onion

Worcestershire sauce

tsp smoked paprika

garlic powder

salt

½ tsp black pepper

beef broth (6

(14.5 oz) can fire-roasted diced tomatoes

tomato sauce

tomato paste

allspice

long grain white rice, uncooked

cabbage (8-10 ounces), cut into ½ inch strips

Turn your Instant Pot to the saute setting. When the display says HOT add in the ground beef and break it up*. Brown for about 5 minutes and then drain off any excess grease and discard. Add in the onion, Worcestershire, paprika, garlic powder, salt and pepper. Cook the onion for about 3 minutes.

Pour in the broth and scrape the bottom of the pot. Dump in the tomatoes, tomato sauce, tomato paste, allspice, rice and cabbage. 

Cover the pot and secure the lid. Make sure the valve is set to sealing. Set the SOUP button to 4 minutes. When the time is up let the pot sit for 10 minutes and then move the valve to venting. Remove the lid. Stir the soup. Salt and pepper to taste. 

Ladle into bowls and serve. You can top with grated mozzarella cheese if desired. 

To Emily's question (October 2, 2019) as to including carrots, celery and potatoes to this soup...I would add 2-3 carrots, chopped and 3-4 celery, chopped along with the chopped onion etc. to the browned ground beef and cook about 3 minutes as directed. Then I would add bite sized pieces of potato along with the broth, tomatoes etc. and proceed with the recipe as directed.

To substitute brown rice for white rice in this soup (and other Instant Pot soup recipes that call for white rice)...I cook the brown rice separately and then add it into the finished soup, otherwise the other ingredients in the soup over cook due to the much longer cook time required for brown rice.

Made this soup last night and it was a huge hit! I served it with sliced garlic bread. Had plenty left over for today and extra to freeze for a treat on a chilly day. Another perfect recipe!

This was good.  I added diced carrots and celery.  Will add a bay leaf or two next time as well as a bit of brown sugar.  Was good served with French bread and basil butter.

I made this delicious cabbage soup!
I didn't have any smoked paprika, so I put on the regular paprika. I didn't know roasted tomatoes either, so it was a great discovery!
My family loved it very much.

I made this for a World Series party...GO ASTROS!!  Everyone raved about it. I added an extra Fire Roasted tomato can just because I had it and WOW, it was sooooo DELICIOUS, next time I will double the garlic and paprika for just a bit more spice and the whole head of cabbage, just because, but seriously this could replace my cabbage rolls since it was so darn EASY and Delicious!! Loved the cabbage roll soup. Tasted just like cabbage rolls only easier. I love the spices you used, smoked paprika and allspice. I had to make a change though but turned out great. I can’t eat tomatoes so in recipes that call for tomatoes,  I usually substitute Trader Joe’s red pepper spread, or Avjar, and some chopped canned green chili’s. It’s thick like tomato paste , so I add water. I also used ground turkey instead of beef, but the beef broth gives it nice flavor. It was wonderful. Thanks for all your great and easy recipes.

This was absolutely delicious!   I was in a rush and Trader Joe's didn't have any whole cabbages, so I used a bag of their organic pre-shredded coleslaw mix, which is green and purple cabbage and some shredded carrots.  One bag was 6 cups so it worked out perfectly!  I'm sure it would have had a different texture with the nice wide slices, but it tasted fine and they didn't turn out mushy or anything.  I will definitely make this again!

Delicious! I omitted the rice to make it low carb (only did 5 cups of broth) and then added a steamed bag of cauliflower rice after it was done cooking. VERY easy to throw together and great flavor. Definitely saving this recipe, thank you for sharing!

Excellent soup!  Thank you!  I've made this twice.  I added sliced celery and chopped bell pepper because I had a lot of those items from Costco and they seemed like a good addition.  Also, only have regular diced tomatoes so added a shake of crushed red pepper flakes.  This is so tasty and great for work lunches.  Thank you for your wonderful recipe.

This soup is sooooo delicious.  I followed the recipe to a T and it is amazing.  I used a whole head of cabbage (small head) as my husband loves cabbage.

Made it right by the recipe and it just smelled and tasted like Worcestershire sauce to us.  We are a slovic family that loves cabbage rolls but this in no way at resembled the traditional dish we love, I made it edible by adding brown sugar vinegar and lots of hot sauce. Loved the idea but not the outcome.
