Instant Pot or Crockpot Campfire Chicken has chicken, red potatoes, corn and lots of flavor from seasonings. An easy dump and go recipe!

Instant Pot Campfire Chicken

chicken broth

chicken tenderloins (frozen

red potatoes,

carrots, peeled and cut into half inch rounds (optional)

olive oil

Tbsp butter

½ tsp smoked paprika

oregano

rosemary leaves

½ tsp dried thyme

onion powder

garlic powder

salt

tsp black pepper

½ cups frozen sweet white corn

Add all ingredients in the order listed above into the Instant Pot.

Cover Instant Pot and secure the lid. Make sure valve is set to sealing. Set the manual pressure cook button to 2 minutes. When time is up let pot sit for 5 minutes and then move valve to venting. Remove the lid.

Instant Pot Instructions:

Add all ingredients into the slow cooker and stir. 

Cover and cook on LOW for 6 hours or on HIGH for 3 hours.

I'm going to try this.. looks good. I don't have a instant pot so can I do crockpot for your recipes? also I don't like smoked paprika,can I use regular paprika..Thank You.

You'll get raw chicken and rock hard potatoes if you follow the instructions as written (2 min cook, 5 min elapsed release). I don't normally have an issue using cook time/elapsed time listed in a recipe. I was skeptical about the instructions so I cut the potatoes and carrots smaller than instructed and cubed the chicken (fully thawed). And I cooked it for 3 minutes with a 5 minute elapsed release. 

I couldn't tell that everything was raw until I'd stirred the dish because the chicken was on the bottom. I cooked it for another 5 minutes with a 5 minutes elapsed release but got a burn warning twice. Guessing that that was due to the seasonings dropping to the bottom of the pot when I stirred. The burned flavour permeated the dish so badly that we couldn't tell if we would have liked the seasoning combo or not. 

My husband asked me not to make this again. That's pretty rare for him but at today's grocery prices I'd rather not chance ruining another $15 in chicken. I do love 1 pot dishes though, and ones that don't include cheese or cream are a rarity. I hope someone else figures out the cook times for this recipe. I may try it again.

I gave this recipe a chance after seeing a review that the chicken didn't cook properly - but even after doubling the recipe, everything came out perfect! I used my IP-DUO and increased the cook time to 5 mins with a 5 min natural release before manually releasing the pressure. Since it was named campfire chicken, I decided to add liquid smoke in with the broth. The key to success here was definitely layering everything exactly in order in the recipe and we had no issues with raw meat even though my IP was filled to the brim! I topped it with bacon bits, sour cream and cheese but my husband enjoyed it plain. Bookmarking this recipe for sure!

I made this and for the life of me I don't understand the negativity. I did deviate a tiny bit but not with the timing. I added the carrots and Yukon gold potatoes. I cut up the tenderloins. Since I only had a package that was less than 1 lb., I added smoked beef sausage. I stirred it, tasted it and put it on keep warm setting in my 8 quart instant pot. I'm so glad that I didn't read the comments until after I finished because even though I have pinned several of your 1 pot meals, this is the first one that I actually made. ❣️
