Step 1

In a small bowl make the rub by combining the cumin, chili powder, ground garlic, ground onion powder, smoked paprika, fine sea salt, ground black pepper, cayenne pepper, and sweetener. NOTE: You can swap this for store-bought rub if preferred.

Step 2

Heavily season both sides of the country ribs with the pork seasoning. You'll have more than you need, save extra rub for other pork or chicken recipes.

Step 3

Add the trivet to the bottom of the pressure cooker and add the broth (or other liquid) to the bottom of the Instant Pot.

Step 4

Lay the ribs on the trivet, stacking the ribs if needed to get them to fit.

Step 5

Pour about 1/2 cup of BBQ sauce onto the ribs and spread the sauce evenly with a rubber tip basting brush. This is optional if you prefer your ribs without barbecue sauce!

Step 6

Cook at high temperature for 45 minutes on the manual/pressure cook setting (depending on your IP model). Natural release the pressure for 15 minutes. Remove the ribs carefully and baste them with more sauce if desired.

Step 7

Optional - broil the ribs for 3-5 minutes to give them a grilled appearance. Enjoy!
