Select Sauté on the Instant Pot.

Finely chop the onion and add to the inner pot with the oil and sauté until they start to brown,

Add the cumin seeds, cinnamon stick, ginger and chopped tomatoes.
Step 4
Wash and rinse the toor daal well until the water runs clear, then add this to the inner pot.
Step 5
Add 2 litres of water, turmeric and salt to taste, then press cancel and secure the lid.
Step 6
Select Pressure Cook, and set the time for 8 minutes. Press Start. When the cooking program finishes, let the pressure release naturally.
Step 7
Meanwhile, make the tarka – Finely slice the garlic and fry in the ghee with the curry leaves, red chillies & cumin seeds & temper until the garlic is cooked, be careful not to burn it.
Step 8
To serve, pour the tarka over the cooked daal and sprinkle with fresh chopped coriander.
Step 9
Serve with rice.
