Step 1
Use a very sharp knife, carefully slice the top off of your artichokes then slice off the stem.
Step 2
Optional: use scissors to trim all the spikes off of the ends of the leaves.
Step 3
Run the artichokes under water to rinse. Then gently open the leaves on the top to loosen up the choke.
Step 4
Place the rack inside the Instant Pot. Add water and the artichokes. Drizzle oil in the top of each artichoke. Sprinkle with salt.
Step 5
Attach lid and set valve to sealed position. Pressure cook on high for 20 minutes. Manually release pressure.
Step 6
Serve with preferred dip. (I mix mayo, fresh parsley, fresh dill, lemon juice, salt and pepper)
