Step 1
Season steak with salt and pepper. In a very hot pan (preheated until smoking hot), heat 2 tbsp of the oil and sear steaks for 2-3 minutes per side. (Note: I strongly recommend doing this step in a pan on the stove, as the Sauté mode on Instant Pots are not hot enough to get a good brown crust.)
Step 2
While the steaks are searing, turn the instant pot on Sauté mode. Add another tablespoon of oil and cook onions and garlic until soft.
Step 3
Add beef broth to deglaze the pot, scraping up browned bits.
Step 4
Add steaks to the instant pot and add Worcestershire sauce, and thyme.
Step 5
Seal the lid, cook on high pressure for 35 minutes, then allow 10 minutes natural pressure release.
Step 6
Remove steaks. Set Instant Pot once again to Sauté mode.
Step 7
Melt butter in the liquid, then add cornstarch slurry (mix cornstarch with water) to thicken the sauce, stirring constantly until it reaches desired consistency.
Step 8
Adjust seasoning if needed.
