Step 1
Place the bacon in a large pot, adding enough water so that it is properly covered.
Step 2
Bring it to a boil over medium-high heat.
Step 3
If the bacon is too salty, you will see white froth forming on the surface of the water. If that is the case, discard the water and start again.

Repeat the process until there is no froth on the water’s surface.
Step 5
Cover the pot and let it simmer for about 1 hour until the bacon is almost cooked through.
Step 6
Meanwhile, slice the cabbage into thin shreds and rinse with cold water if necessary.
Step 7
Add the cabbage to the pot with the bacon and let it cook for 20 more minutes.
Step 8
Remove the bacon from the pot, strain the cabbage, and transfer both to a serving plate.
Step 9
Add butter and season with pepper.
Step 10
Serve the bacon and cabbage with parsley sauce and potatoes.
