Step 1

In a medium bowl, whisk together the flour, sugar, baking soda, and salt. In a separate small bowl, whisk together the egg white and buttermilk.

Step 2

Add the cubed butter to the medium bowl with the dry ingredients, and incorporate it with your fingers, rubbing it in to create flakes of butter throughout the flour.

Step 3

Add the wet ingredients into the flour/butter mixture and stir together with a spatula until just barely combined and clumpy, with most of the flour moistened.

Step 4

Use your hands to gather the dough into a ball, sticking it all together. Shape the ball into a disc, about 1 inch high, on a piece of parchment paper.

Step 5

Cut the disc into four equal pieces and place on a parchment lined baking sheet or small baking dish. Place the scones in the fridge while the oven preheats.

Step 6

Preheat the oven to 400 degrees Fahrenheit. When the oven is preheated, remove the scones from the fridge and brush each one lightly with buttermilk. Place in the preheated oven and bake for 15-18 minutes until the tops are lightly golden.

Step 7

Let cool on a cooling rack and enjoy!
