Prep the Pork Belly: Cut the pork belly into 1-inch cubes.

Season: Combine brown sugar, paprika, garlic powder, onion powder, salt, and pepper. Coat the pork belly cubes evenly with the seasoning.

Smoke: Preheat the smoker to 225°F. Place the pork belly cubes on the smoker grates. Smoke for 2-3 hours until they reach an internal temperature of 190°F.
Step 4
Glaze: Mix BBQ sauce, honey, and apple cider vinegar. Toss the smoked pork belly cubes in the glaze.
Step 5
Finish: Return the glazed pork belly to the smoker for another 30-45 minutes to caramelize the glaze.
