Step 1

Preheat oven to 375 degrees.

Step 2

Coat a 9 x 9 baking dish with non stick spray.

Step 3

In mixing bowl, combine artichokes, tomatoes, garlic, flour, italian seasoning, salt and pepper.

Step 4

Pour into prepared pan.

Step 5

Nestle chicken into mixture.

Step 6

Brush chicken with 2 tablespoons olive oil.

Step 7

Bake for 30 minutes or until chicken is completely cooked through and reaches an internal temperature of 165 degrees farenheit.

Step 8

Top with cheese and bake an additional 5 minutes or until cheese is melted.

Step 9

Garnish with fresh basil if desired.
