Step 1
Preheat the oven to 400°F. Heat a cast iron (or oven-safe) skillet over medium burner. Add olive oil and potatoes. Cook until they are crispy on the outside, about 5-10 minutes. Make a space in the center of pan and add to that garlic, Italian seasoning, salt, pepper, and paprika. Cook for 1-2 minutes. Remove from heat and sprinkle cheese on top.
Step 2
Transfer pan to oven and cook for 10-15 minutes or until cheese is melted and potatoes are fork tender. Sprinkle with parsley and a little extra parmesan just before serving.
