Step 1

Preheat your smoker to 108°C.

Step 2

Preheat your oven or smoker to 120c.

Step 3

Slice jalapenos in half vertically and remove the seeds and inner lining.

Step 4

In a large bowl, mix your grated cheddar, cream cheese, paprika, pepper and salt into a batter.

Step 5

Spoon cheese batter into each jalapeno half, filling to the top.

Step 6

Wrap each half jalapeno with bacon, then hold in place with a tooth pick (or in the case of our photos, skewers)

Step 7

Place evenly in racks in your smoker or oven and cook at 120c for 90 minutes (or longer if you desire)
