Remove the chicken from the fridge 12 to 24 hours before you want to roast it and pat dry with a paper towel.

Combine the salt, pepper and baking powder and rub them all over the skin of the chicken. Place the chicken onto a baking sheet fitted with a rack.

Place the chicken back into the fridge on the bottom shelf, uncovered. When you are ready to cook the chicken, pat it dry it a paper towel once more.

Preheat the oven to 400°F.
Step 6
Stuff the chicken with the lemon, onion, garlic, and thyme. When the oven is hot, drizzle the chicken with olive oil and place into the oven at 400°F for 30 minutes.
Step 7
Turn the oven down to 350° and continue to roast for another 45 minutes to an hour, until the internal temperature reads 165°F.
Step 8
Remove the chicken from the oven and let it rest for 20 minutes. Carve and serve.
