Step 1

Place onion and chilli into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula.

Step 2

Add ghee, curry leaves, cumin, cinnamon and cloves and cook 4 min/120°C/speed 2. Transfer mixture (tarka) into a thermal serving bowl or other large bowl and cover to keep warm. Do not clean mixing bowl.

Step 3

Place simmering basket onto mixing bowl lid and weigh rice into it. Rinse rice until water runs clear. Place water and salt into mixing bowl. Re-insert simmering basket with rice, add saffron (optional) into it, stir to combine, then cook 14 min/100°C/speed 4. Remove simmering basket with aid of spatula and transfer rice into bowl with tarka and stir to combine. Garnish with coriander leaves and extra chilli to serve.
