Combine all ingredients for meatballs. Sear on medium high heat one each side for 4-5 minutes. Add 2 tbl. butter and cook additional 2-3 minutes. Cover and set aside. Prepare your BBQ sauce by combining all ingredients over medium heat. Bring to a simmer then reduce to medium low. Simmer on low until reduced to desired thickness. Toss meatballs in sauce and cook 2-3 minutes on medium low heat to allow sauce to completely adhere to meatballs. Garnish with chives, carrot and lime wedges.
