Step 1
Pat pork chops dry with a towel. Set aside. Preheat oven to 350˚F.
Step 2
In a small bowl, combine garlic powder, smoked paprika, black pepper, and cayenne (if using). Generously rub spice mixture over the top, bottom, and sides of each pork chop.
Step 3
Use two thick-cut pieces of maple bacon per pork chop. Starting with the end of the pork chop on the bottom of the pork chop, wrap each strip of bacon around. Try to have the loose ends snug to the bottom so the bacon stays on (although it's not the end of the world if the tip of the bacon ends up on top).
Step 4
Bake about for 25 minutes for a medium pork chop (30 minutes for a more well-done chop) turning halfway through. During the last minute, turn the pork chops back over and stick under the broiler just until the edges of the bacon start to crisp up. Let the pork chops rest for about 10 minutes before slicing and serving. Enjoy!
