Place the nuts in a jar and pour the bourbon. Seal the jar shut and allow the nuts to soak in the bourbon for at least 8 hours up to overnight.

In a medium bowl, mix the sugar and softened butter until fluffy. Stir in the soaked nuts and bourbon. If the mixture is too sticky, chill it in the fridge for 30 minutes to 1 hour.

Using a small cookie scoop, shape the mixture into 3/4-inch balls and arrange them on a baking sheet lined with parchment paper. Refrigerate for at least 8 hours to overnight.

Line another baking sheet with parchment paper and set aside.

Boil water in a double boiler. Reduce the heat to low. Put the chocolate in the top pot, and place it over the bottom pot. Stir the chocolate, scraping the bottom and sides of the pot with a rubber spatula, until smooth and melted.
Step 6
Roll the prepared balls in melted chocolate to coat, and then set them on the lined baking sheet. Refrigerate until the chocolate shells have hardened. Serve and enjoy!
