Kentucky Butter Cake Cookies

Step 1

Preheat oven to 350°F and line a baking sheet with parchment paper.

Step 2

In a large bowl, combine cake mix, eggs, and melted butter. Mix until well combined.

Step 3

Using a tablespoon sized cookie scoop, drop dough onto prepared baking sheet, about 2 inches apart.

Step 4

Bake in preheated oven for 7-8 minutes. Remove from oven and let cook on baking sheet for 5 minutes before moving to a wire rack to cool completely. The cookies might look underdone, but they'll continue to cook on the baking sheet.

Step 5

While the cookies cool, make the glaze.

Step 6

In a small saucepan over medium-low heat, combine the butter, sugar, water, and vanilla. Cook until sugar has dissolved, whisking constantly, 4-5 minutes.

Step 7

Spoon glaze over cooled cookies. Let set and dust with powdered sugar. Enjoy!
