Step 1

Wash and pat dry the whole chicken. Then rub the chicken with one tablespoon of olive oil.

Step 2

In a small bowl, combine all the dry herbs and seasonings to make a dry cajun rub.

Step 3

Rub the entire chicken with the seasonings, being sure to add seasoning inside the cavity of the chicken.

Step 4

Add the carrot and onion pieces to the bottom of the crockpot.

Step 5

Turn on the slow cooker for 6 hours on the low setting or for 4 hours if setting the crockpot to high.

Step 6

Note that the chicken will release a lot of liquid during the cooking process. The vegetables added to the bottom of the pan serve to keep the chicken from becoming soggy.

Step 7

After the chicken has cooked for the allotted time, check with an instant-read thermometer if the chicken is done. Place the thermometer in the thickest part of the chicken thigh. It should register for 160 degrees F when ready.

Step 8

Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 weeks.
