Step 1
Heat the avocado oil over medium-high heat
Step 2
Take a small piece of chicken skin and place it in the oil
Step 3
If the skin begins to bubble immediately, the oil is hot enough to use. Otherwise, continue to wait until the oil is hot enough
Step 4
Place half the chicken into the oil and begin to fry
Step 5
Adjust the heat if necessary; too many and/or violent bubbles means the oil is too hot
Step 6
Turn the chicken around the 10-minute mark
Step 7
Continue to fry and brown until the skin and outer chicken is a nice golden brown
Step 8
Remove from the oil, place onto a plate with a paper towel, and season with your seasonings of choice
Step 9
Eat and enjoy!
