Step 1

Place the mozzarella and cream cheese into a microwave safe bowl. Heat the cheeses at 30 second intervals until they are melted and well combined.

Step 2

Add the almond flour, baking powder and xanthan gum to the bowl with the cheese mixture, and knead with your hands until completely combined.

Step 3

Place the dough into a mixing bowl, add an egg and beat on high until well blended.

Step 4

Put the dough into the freezer for 30 minutes to make it easier to handle.

Step 5

Preheat the oven to 350 degrees.

Step 6

Separate the dough into 6 equal portions.

Step 7

Roll each portion of dough into a long thin breadstick shape, and place it on a parchment lined baking sheet.

Step 8

Bake for 20 minutes, or until browned and cooked through.

Step 9

Brush the melted butter onto the top of each breadstick, and sprinkle with the garlic powder before serving.
