Step 1
Bring a large pot of liberally salted water to a boil and cook the pasta according to the package directions. Set aside.

Meanwhile, in a medium saute pan over medium-high heat, add the heavy cream, thyme, white pepper, mustard powder, onion powder, garlic powder, cayenne, nutmeg, and cream cheese.

Bring to a boil, whisking to combine everything, then reduce to a simmer. Continue to whisk and cook until it begins to thicken, about 5 to 7 minutes.

Stir in the American, Cheddar, and Parmesan cheese in small handfuls, waiting for each handful to completely melt before adding more.

Taste and add salt if needed.
