Preheat oven to 475 F. Line a baking sheet with foil. Cut jalapeños in half lengthwise remove seeds. In a medium bowl, or the bowl of a standing mixer with a paddle attachment, beat cheese and cream cheese together to form a soft, cream blend. As the oven preheats, cook and brown beef in a large skillet on the stove. To stuff peppers, add a spoonful of beef to each pepper and completely cover with the cheese mix. Bake for 10 minutes until filling is bubbling with some brown spots. Broil for additional color. As peppers bake, place cooked bacon and pork rinds in a food processor. Pulse to create a combined crumbly texture. Once peppers are removed from oven, sprinkle and pat into each pepper. Serve immediately.
