Step 1
• Wash and dry produce.• Pat steak* dry and season withsalt and pepper. Drizzle oil in ahot medium pan. Cook steak todesired doneness, 3-6 minutes perside. TIP: While steak cooks, moveon to Step 2.
Step 2
• Trim, peel, and thinly slice shallot.Halve lemon. Remove and discardany large stems from kale; chopif desired. Trim and thinly slicecucumber.• In a small microwave-safe bowl,mix shallot, 1 tsp sugar, juice fromhalf the lemon, salt, and pepper(2 tsp sugar and juice from wholelemon for 4). Cover bowl withplastic wrap and microwave 1 minute.• Set aside to pickle, stirring occasionally.
Step 3
• Place kale in a large bowl; usingyour hands, massage kale (similarto how you would knead dough)with a drizzle of olive oil anda pinch of salt until leaves aretender, 1 minute.• In a second small bowl, whisktogether buttermilk dressing,sour cream, 1 tsp Cajun SpiceBlend (2 tsp for 4), and as muchhot sauce as you like.
Step 4
• Transfer Cajun ranch dressing tobowl with kale. Add mixedgreens, cucumber, tomatoes, andhalf the pickled shallot (drainingfirst); toss to combine. Season withsalt and pepper.• Thinly slice steak against the grain.• Top salad with steak andremaining pickled shallot(draining first). Serve.Steak is fully cooked when internal temperature reaches 145°.
