Step 1
Reserve 2 tablespoons of the chopped onion and place the remaining onion in a large bowl. Add the lamb mince, parsley, pepper and allspice to the bowl and use your hands to mix until well combined.
Step 2
Place half the lamb mixture in the bowl of a food processor and process for 30 seconds or until well combined. Transfer to a large bowl and repeat with remaining lamb mixture.
Step 3
Divide the lamb mixture into 12 portions. Use your hands to shape each portion around each skewer to form a 15cm-long sausage shape.
Step 4
Heat the oil in a medium frying pan over medium-high heat. Add 4 lamb kaftas and cook, turning occasionally, for 10 minutes or until cooked through. Transfer to a plate and cover with foil to keep warm. Repeat with the remaining kaftas in 2 more batches.
Step 5
Place the garlic, sumac and reserved onion in a small bowl and stir to combine. Place the lamb kaftas on a serving plate and sprinkle with the onion mixture. Serve immediately.
