Step 1
Combine mince, garlic, onion, parsley, cumin and coriander in a large bowl. Season. Mix until well combined. Form lamb mixture into 12 x 8cm sausage shapes. Place on a tray. Cover and refrigerate for 30 minutes. Soak 12 small bamboo skewers in cold water.
Step 2
Meanwhile, place tzatziki, mint and garlic in a bowl. Stir to combine. Cover and refrigerate until ready to serve.
Step 3
Thread a skewer through the centre of each lamb sausage. Preheat a greased barbecue plate on medium heat. Spray meat skewers with oil. Barbecue, turning occasionally, for 8-10 minutes until cooked through. Transfer to a large tray, cover with foil and rest for 5 minutes. Serve with minted tzatziki and lemon wedges.
