Step 1

Heat oil in a medium frying pan, add onion and ginger, and cook over medium heat for 5 minutes or until onion is soft.

Step 2

Add lamb and spices, and cook for 3 minutes, until lamb is browned. Add stock, kumara and apricots, and cover. Cook on a high simmer for 25-30 minutes or until kumara is soft.

Step 3

Stir in parsley and season with salt and pepper. Serve with instant couscous.
