Step 1

Set the electric pressure cooker to “saute” until “hot.”

Step 2

Add the bacon and cook until browned. Remove and drain on paper toweling.

Step 3

Place the ground beef into the electric pressure cooker and begin cooking, crumbling as it cooks, until almost completely browned. Add the onions and bell peppers. Continue cooking until the meat is no longer pink. Drain well and then return to the pressure cooker. Add the beef broth and scrape the bottom to remove any cooked on bits. Press cancel to end the “saute” mode.

Step 4

To the ground beef and vegetables, add the garlic, cumin, smoked paprika, chili powder, salt and black pepper. Stir together to combine.

Step 5

Over the beef, pour the tomatoes and tomato paste. Do not mix together.

Step 6

Place the lid on the electric pressure cooker and set the valve to sealing. Program the electric pressure cooker to “pressure cook” or “manual” for 10 minutes. When the cooking cycle is complete, allow the electric pressure cooker to naturally release the pressure for 10 minutes before performing a quick release of the remaining pressure.

Step 7

Carefully remove the lid. Stir in the cooked bacon.

Step 8

Serve with shredded cheese, diced avocado, sour cream, or your favorite toppings.
