Step 1
Add gin, lemon juice, tea syrup, lavender bitters and egg whites to a shaker tin and dry shake without ice.
Step 2
Break the seal on the tin and add ice. Shake for at least one minute more.
Step 3
Using a Hawthorne strainer, strain into a Collins glass.
Step 4
Add ice, top with soda water, and dash a few drops of the lavender bitters onto the egg white foam.
Step 5
Using a toothpick, swirl the bitters into the foam. Garnish with a lavender sprig.
