Step 1
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Beat in the honey, egg, and vanilla extract until the mixture is smooth and fully incorporated.

In a separate bowl, whisk together the flour, baking soda, and salt.

Gradually add the dry ingredients into the wet mixture, mixing until just combined.

Gently fold in the dried lavender flowers and chopped almonds or walnuts (if using).

For best results, refrigerate the dough for 30 minutes to make it easier to handle and prevent spreading during baking.

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Scoop tablespoon-sized portions of dough and roll them into balls. Place them onto the prepared baking sheet, spacing them about 2 inches apart.

Gently press each dough ball with the back of a spoon or your fingers to flatten slightly.

If using, sprinkle the tops of the cookies with a little granulated sugar and a pinch of lavender for extra flavor and decoration.

Bake the cookies for 10-12 minutes, or until the edges are lightly golden and the centers are set.
