Step 1

Place all salsa ingredients into mixing bowl and chop 4 sec/speed 5. Transfer into simmering basket and place over a bowl to drain. Cover and place into refrigerator until ready to use. Clean and dry mixing bowl.

Step 2

Place cashews and pine nuts into mixing bowl and mill 5 sec/speed 10.

Step 3

Add lemon juice, water and salt and blend 1 min/speed 8. Transfer into a bowl, cover and place into refrigerator until ready to use. Clean and dry mixing bowl.

Step 4

Place avocados, lime juice, salt and pepper into mixing bowl and mash 4 sec/speed 4. Transfer into a bowl and place into refrigerator until ready to use.

Step 5

Place a large serving bowl onto mixing bowl lid, then weigh refried beans into it. Use spatula to create a smooth, even surface. Gently spread the Avocado mash on top of the beans, followed by a layer of the Sour "cream". Top with iceberg lettuce, then reserved Salsa and grated cheese. Garnish with coriander and serve with corn chips (see Tips).
