Step 1
Turn the Ninja Foodi on, select the Sear/Saute function on HIGH and let it warm up for a minute. Add the butter to the pot and let this melt for a minute.
Step 2
Now add the leeks, onion and potatoes. Stir this through and put the pressure cooker lid on with the vent OPEN. Saute on LOW for 8 mins.
Step 3
Add the stock and milk, plus any salt and pepper. Stir this through and put the pressure cooker lid back on, setting the vent to SEAL. Pressure Cook on HIGH for 6 minutes, then Quick Release.
Step 4
Stir through and then blend the soup, using a hand blender or by transferring to a blender. If transferring, you may need to do this in 2-3 stages, as the recipe makes quite a lot of soup.Enjoy!
