Step 1
Melt 15g butter in a frying pan over medium heat. Cook leek, stirring, for 5 minutes or until soft. Cool. Combine leek, feta and parsley in a bowl.

Preheat oven to 180ºC. Line a baking tray with baking paper. Melt remaining butter in the microwave. Brush 1 filo sheet with butter. Fold in half lengthways. Place 1 tablespoon leek mixture at the short end, leaving a 2cm border. Fold in sides and roll up firmly to enclose. Place, seam-side down, on lined tray. Brush with butter. Repeat with the remaining filo, butter and leek mixture to make 18 cigars.
Step 3
Bake the cigars for 15-20 minutes or until golden.
