This is a great recipe for leftover mashed potatoes. I never liked reheated mashed potatoes, but if you fry them in a pan as a potato pancake, they taste delicious. You might need to adjust the ingredients depending on how much mashed potatoes you have left over.

Leftover Mashed Potato Pancakes

potatoes

dry bread crumbs,

butter

Combine mashed potatoes, egg, and pepper in a bowl and mix well together.


Pour bread crumbs into a small bowl. Shape potato mixture into 3-inch patties with wet hands and dip in bread crumbs so they are evenly coated.


Heat oil and butter in a nonstick skillet over medium heat and cook potato cakes on both sides until they are heated through and browned, about 4 minutes per side.


this the simplest, yet tasty way to refry potatoes! my family loves this way so much they request it for breakfast the next day! easy to make, and so versatile,,, i have added shredded cheese, chopped onions, bacon, garlic powder, even finely chopped ham, all are wonderful!  thanks for the great recipe

I did make as written as not fair to rate a recipe that has been altered. Did not care for breadcrumbs. My grandmother always made potato pancakes at least once each week but used a tiny bit of flour on outside and then were served with sour cream or applesauce. Funnily enough I just finished dinner and logged in to find this recipe. A friend just cooked something similar but he used ground pork and seasoned with salt pepper cumin italian seasoning and a little tomato paste. Once pork was cooked he used leftover mashed placed a good portion in hands and put pork in middle. Formed into a 2 inch ball dipped in beaten egg and then in breadcrumbs and fried. Delish.

I will make it again --i liked it with more onion.

I added extra onion cheese garlic powder and coated in pankos. hey were pretty good but still lacking something

These were excellent.  I added chopped onion, Lawrys, garlic powder, grated parmesan cheese, and cheddar cheese. They were pretty wet so I added some corn starch. 
 I used Italian bread crumbs because that's what I had.  I'll always make more mashed potatoes than I need, just so I can make these again.

Easy and delicious just as written. I can imagine many variations but if you want a simple and tasty recipe - this is it.

I skipped the oil and butter and made it in my air fryer on the french fry setting. It was delicious.
