Step 1

Heat the olive oil in a large pot over medium high heat.  Add the onions, garlic and bell pepper.  Season with salt, pepper, chili powder and cumin. Add the bay leaf and cook for a few minutes, until vegetables start to soften.

Step 2

Stir in the beer, bring to a boil and cook for about 5 minutes until reduced by half.

Step 3

Stir in the gravy and beans, reduce heat to a simmer and cook for about 10 minutes.  Stir in the pork and cook for another 5 minutes before serving.

Step 4

Divide between bowls and pass the cheese and corn chips for serving, if desired.
