Step 1

Preheat oven to 400°F (200°C).

Step 2

In a large bowl, whisk together lemon juice, olive oil, smashed garlic, yellow mustard, salt, pepper, dried oregano, and garlic powder.

Add chicken thighs and potatoes to the bowl; toss to coat evenly in marinade.

Step 4

Arrange chicken and potatoes in a single layer on a large baking sheet or roasting pan.

Step 5

Roast for 40–50 minutes, turning potatoes halfway, until chicken is cooked through and potatoes are tender and golden.

Step 6

Garnish with fresh oregano before serving.

Step 7

Blend cottage cheese, lemon juice, lemon zest, kosher salt, ground pepper, garlic cloves, and dried oregano until smooth.

Step 8

Marinate chicken thighs in the cottage cheese mixture for at least 1 hour (or overnight) before cooking.

Step 9

Follow steps 3–6 as above for roasting with potatoes.

Garnish with fresh dill, fresh mint, and lemon wedges.
