Step 1

Microwave potatoes until just tender, about 7 minutes. Smash slightly, but keep whole.

Step 2

Heat olive oil in medium sauté pan over medium-high heat. Add potatoes and brown on one side, cooking about 4 minutes. Flip and brown on second side, cooking another 3 minutes. Drain potatoes.

Step 3

Sprinkle with lemon pepper seasoning and chopped parsley.
