Step 1

Add your drained and rinsed chickpeas to a large bowl and roughly mash with a fork.  Next, add in all of your chopped vegetables and mix everything together.

Step 2

Add the remaining ingredients (tahini, lemon juice, garlic, fresh herbs, salt and pepper) and mix everything together really well.

Step 3

Warm your pita and then top it with a few scoops the chickpea salad and enjoy!  This chickpea salad can also be enjoyed by itself, with chips, crackers or even lettuce wraps!
